It can be difficult to get the kids to sit down and eat a healthy lunch before they head off to play. But a summery twist on their usual sandwich might make them more likely to hang around. Are you kids crust-averse? Cut off crusts using star or heart-shaped cookie cutters.
For an innovative summer “sandwich,” ask the deli for thickly sliced cold cuts, then stack the meat, cheese cubes, and veggies on skewers to make a sandwiches-on-a-stick.
3. Ants (or Frogs) on a Log
You might remember ants on a log: celery sticks with peanut butter and raisins or chocolate chips on top. They’re a healthy, whimsical snack that kids can make themselves. For a savory version of this sweet treat, swap out the peanut butter for cream cheese and the raisins/chocolate chips for sliced green olives—frogs on a log!
4. Pita Pizzas
Need to make a quick dinner after the kids get back from day camp? Pita pizzas are fast and customizable—just spread pita breads with tomato sauce, cheese, and toppings (try peppers, onions, basil, pepperoni, Italian sausage), and bake for about 10 minutes. Added bonus: take a break and let the kids choose their own toppings and assemble their pizzas themselves. Then, just pop the pitas in the oven!
